Let's agree on the fact that Paris is not very "strong" for Japanese and sushi restaurants. There are little "real Japanese" places and if there are some , it seems that they are "frozen" in 70s or 80s different from London or New York where there are many modern sushi restaurants.
Kinugawa ( 9, Rue du Month-Thabor, 75001, tel 01 42 60 65 07) is one of the best Japanese restaurant in Paris with always fresh fish and..."tired" 70s decor.
