Agapé Substance is like a breath of fresh air so needed in the Parisian gastronomic world. The neo bistrot on rue Mazarine ( in the 6th ) is tiny, has walls and ceilings made of mirrors and the chairs are not at all comfortable, but what you get on your plate is exciting ,sensational and simply very good. Give me Agapé Substance instead of any 3 Michelin stars restaurant in Paris at the moment, i will choose Agapé without a second thought!
I had the "carte noire" ( black truffle menu), which included the following dishes:
Watercress "snow" with seashells stock (Cold, fresh, acidic; pronounced seafood flavors thanks to the stock.)
Butter (the one on the right is with seaweed)
Jerusalem artichoke with hazelnuts , shallots and champagne. (Perfect balance of the crunchy textures)
Egg with sweetcorn, mustard and caraway pureé ( I don't even know how to describe it, simple yet truly delicious)
Pumpkin and speck ham soup with black truffle shavings (The best hot pumpkin soup I've ever had!)
Sea urchin with coffee ( I am a big fan of sea urchin and I usually I don't like to mix it's unique flavor with anything else. Who could have thought that it goes so well with coffee?)
Risotto with celery,chestnuts and black truffle ( Adding celery shavings to the risotto was a great idea)
Brussels sprouts with salmon eggs. (The bitterness of slighlty burnt Brussels sprouts and the saltiness of salmon eggs were perfectly complementary)
Skate with Chinese artichoke and truffle (Skate was nice and moist and i just love Chinese artichokes)
4 year old Comté cheese with black truffle ( Extraordinary cheese with extraordinary mushrooms)
Citron fruit,white chocolate,milk and carrot
Mikan (like citron in the previous dessert, it is a citrus fruit),gianduja chocolate,smoked verbena biscuit
