Sasabune sushi

Those Zagat inspectors who have rated Sasabune sushi 29 out of 30, putting it on the same level as Per Se and Le Bernardin, probably have never been to other great sushi-as in Manhattan (or… Japan). I don’t mind the scruffy environment and casual service and I think it’s totally normal not to serve Californian rolls or spicy tuna at an authentic Japanese restaurant. (“No spicy tuna.No California roll. Trust me.” is written on the restaurant’s door.) But I will never trust a sushi master who serves his rice too hot (the rice of some of the rolls wasn’t cooled enough) or who makes his nigiris and rolls so hastily, they are falling apart when eaten.
