This is what I would call the quintessentially perfect piece of veal. It’s been slowly braised and then roasted which makes it soft, juicy and fatty in the inside and crispy on the outside. Even if the new chef of  Les Enfants Rouges  (9 Rue de Beauce, 75003 Paris; tel. +33 1 48 87 80 61 ), a small bistro in the 3rd is Japanese, his cuisine is surprisingly traditional French. The Japanese perfectionism and attention to detail are prominent though as this veal dish served with lentils was one the best I’ve ever had… I asked for extra black truffles, because why not!
