Derek Wilcox, chef of Shoji at 69 Leonard in NYC, is one of very few non-Japanese sushi masters in the world to have reached a comparable level to the best in Japan. Originally from upstate New York, Derek trained at Kikunoi in Kyoto for 7 years and at Sushi Aoki in Ginza for 3. If being a shokunin is a state of mind, Derek definitely satisfies the criteria. Since moving to NYC 2 years ago and setting up shop at Shoji, he works with only top-quality ingredients from the US and Japan and never ceases to evolve and refine his skills.
