This is the freshly opened Christophe Saintagne’s bistro in the 17th in Paris. In fact, Papillon opened it’s doors, where one of my favourite restaurants, Sud Ouest Monceau, used to be. I even found the post I did in 2006 about this cassoulet gem!  Hope the new place lives up to Saintagne’s reputation, but so far, I found it pretty good. (Christophe Saintagne quit his position at Le Meurice, where he  had 3 Michelin stars at one point… ).
