Late summer colours and flavours at Le Doyenné

Late summer colours and flavours at Le Doyenné, a restaurant, a guest house, and a farm one hour drive from Paris. Nestled in the former stables of the historic Château de Saint-Vrain, the location holds a special artistic significance as the site where renowned sculptors Niki de Saint Phalle and Tinguely created their monumental works in the 70s.

The restaurant is operated by chefs-owners James Henry and Shaun Kelly , together with the Mortemart family. With diverse experiences in top kitchens around the world, they took over the old château barns in 2017 and meticulously restored them. A significant focus of their project lies in the splendid potager, where they are revitalizing regenerative agriculture practices to grow heirloom vegetables. These vegetables as well as the animal farm serve as the cornerstone of their culinary offerings.

This was the menu just over one week ago. It was still very hot sunny and felt like summer.
