Yves Camdeborde is called "the pope" of "bistronomie". Years ago he quit his career of "chef étoilé" at Crillon and went for democratization of gastronomy by opening La Régalade . Since 2005 Yves Camdeborde runs Le Comptoir du Relais ( 9 carrefour de l'Odéon, 75006, tel. 01 44 27 07 97), a charming bistro in Saint-Germain.The bistro doesn't take reservations for lunch, so when i came few minutes to 12, people were waiting outside already. It is a pretty popular place.
Different than the minimalistic menu at Le Temps au Temps( just a board on a wall with daily menu), here you will find everything, like"salade niçoise a ma façon", "croque monsieur vache qui rit dinde" or simply a plate of "saucisson" or a can of "sardines". ( I've never been here at night, but as far as i know in the evenings Yves Camdeborde serves more elaborate dishes and you do need to book in advance.) There is lots of meat and especially pork, so i happend to order pork twice. Overall I loved the bistro and togather with La Régalade ( since Yves Camdeborde left, Bruno Doucet is in charge), these are the places in Paris that i will return with pleasure.
Pork knuckle with piquillos - suprisingly very refreshing.
Poached and raosted suckling pig- it was not as fat as it might seem from the first sight. On the contrary-very good.
